Ingredients
- 3 Nos kashmiri red chilies (whole)
- 2 tbsp. coriander Seeds
- 1 tbsp. basmati rice (uncooked)
- 1 tbsp. cumin seed
- 1 tbsp. black peppercorn
- 1 Nos star anise
- 1/2 tbsp. methi seeds (fenugreek)
- 1 tbps. mustard seeds
- 1 tbsp. clove (whole)
- 1 tbsp. Green cardamom seeds
- 1 tbsp. Fennel seeds
- 1 cup vegPro Soya chunks (Ingredients for curry )
- 3 nos potatoes (Medium sized)
- 3-4 tbsp. refined oil
- 1 stick cinnamon stick
- 2-3 cloves
- 1 bay leaf
- 2-3 green cardamom
- 10-12 curry leaves
- 2 tbsp. ginger garlic paste
- 3 green chili slit
- 2 finely chopped (medium sized) onions
- 3 finely chopped tomatoes
- 1 coconut milk
- 2 tbsp. brown sugar
- 2 tbsp. apple cider vinegar
- 2 cup water
- Salt to taste
- 1/2 tbsp. turmeric powder
- 1 tbsp. coriander powder
- 1 tbsp. red chili powder
Instructions
Dry roast all the ingredients in a pan without oil until the spices release the aroma.
Dry grind them into a fine powder and store in a jar. Use as required.
Soak the Soya chunks in water. Boil as per the instructions on the packet
Parboil the potatoes in salted water and keep them aside. Peel the potatoes and cut them into cubes.
Marinate the cooked soya chunk and potatoes with 2 tbsp Srilankan powder and 1 tbsp oil. (The oil helps the marination to stick to the vegetable). Keep aside for ½ hour.
Heat oil in a vessel. Add the bay leaves and whole spices. Saute.
Add onions, ginger-garlic paste, and green chillies. Cook until brown.
Add in the tomatoes, turmeric powder, red chilli powder and 1 tbsp Srilankan curry powder.
Cook until the oil separates and tomatoes are mushy.
Add in the marinated soya chunks and potatoes. Add 1 glass of water and salt. Let the mix boil on a medium flame.
Add in another glass of water after 7-8 minutes and continue to cook. Check for seasonings.
Once the potato and soya is cooked completely add in the apple cider vinegar and sugar. Add in curry leaves and boil for a few minutes.
Add in the coconut milk and continue to cook. Serve immediately once done.
